Perfect Dressing for Mango

Dressing ingredients
5 tbsp extra virgin olive oil
1 tsb sweet chili sauce
3 tbsp chopped fresh basil leaves
2 tbsp lemon or lime juice

baked chicken and fried potatoes

Ingredients:

cuts of breast fillet
salt and pepper
rosemary
olive oil
4 pieces medium-sized potatoes
1 slice of (back) bacon cubed into small pieces


Procedures:

Chicken
Marinade breast fillet in salt, pepper, rosemary and olive oil for 15-20 minutes.
Heat oven to 375degrees for 10 minutes.
Bake chicken for 30-35 minutes, turning after 15 minutes.
For the sauce, mix the juices from baking with lime juice. Add salt & pepper to taste.

Potatoes
Saute bacon in a pan. Fry potatoes until cooked, sprinkle rosemary.

Serve in plate with your choice of salad (recommended: grilled aubergine, red and yellow bell peppers).


Note: recipe is twice-tested ;-)

a pasta...

Ingredients:
1 pack fusily/pene
salt
4 small red onions (baby), sliced
1 head of garlic, mashed
1 bunch asparagus, cut
vinegar - spicy
1 cup white wine
1/2 cup red wine

1 bunch sweet potato greens
1 bunch (100 g) flat leaf (italian) parsely, chopped
1/2 bunch basil, chopped
4 cloves of garlic, minced
3 baby red onions, diced
1 tomato, diced
parmesan


Procedures:

*Cook pasta. While cooking saute garlic and onion with chili pepper, add asparagus towards the time the pasta is done cooking.

*Deglaze pan with vinegar and red wine (vinegar to taste), add salt to taste and add white wine.

*Strain pasta, add to asparagus to soak up the wine.

*Add greens.

*When done soaking up the wine, add the herbs, onion, tomato, garlic and parmesan. Mix and serve immediately. Note: These ingredients should be warm but not cooked. Asparagus should be crisp (crunchy!)

tapa

Ingredients:

1kg sirloin
1/2 cup brown sugar
2 tsps rock salt
3 tbsps soy sauce
crushed garlic (1 head) or more
1 tsp pepper

Procedures:

Mix all ingredients for marinade sauce
Marinade sirloin into the sauce for half day or overnight
Put corn oil in beef to tenderize
